I set up a new Virtual Machine with Windows 7 x64 at an ESXi server.
I updated the OS (Windows Updates etc.) and placed Cameyo on the desktop.
Then I installed the required .NET Framework and the VCC runtimes or something else that the packager only has to capture the program and not the other stuff that normally shoud be on the computer.
The machine has 4GB of RAM and 4 vCPU and it is very slow at capturing the install.
If I try to save the edited package after deleting some unnecessary stuff out of the package the Task Manager shows for the packager: "Program is not responding" or what it is in English, I have an German Windows, sorry.
I tried it at this virtual machine and at another one with Windows Server 2008 R2. Same problem here.
Do I do something wrong or do you need more information about anything else?

Did you Save or Save as? The latter will be slower.
It is good that you have a fast machine with ample memory; however, your bottleneck is read/write speeds of your VM disk. If your VM is on an HDD that is shared with a host that is performing other tasks, background or otherwise, read/write activity on the VM will be slower than it otherwise could be.
When editing Files/Registry through Package Editor, the package's FileSystem/Registry database has to be updated, which can involve a lot of reading and writing to disk, particularly if the package is large in size. If you know ahead of time which files you are going to delete, you can do this before the post-installation snapshot, thereby saving time of having Package Editor update the package's database. Admittedly, this would probably be the rare case. Another thing you can try, which may be slightly faster, is to delete files through a virtualized Command Prompt, i.e. appname.cameyo.exe -exec cmd, and then use -Repackage parameter after you have deleted all undesired files.
Having said all that, my package of vSphere Client was ~500MB and took less than two minutes to save when I deleted random files from it. (I used Save, not Save as.) If you upload your original package to a file-hosting site, provide the link, and advise what changes you are making to it, I can test on my end.
